What Are Pink
The pink oyster mushroom (pleurotus djamor) is a strikingly unforgettable, edible fungi in the family Pleurotaceae. Growing well in warm climates has lead this mushroom to become widely cultivated in Asia. Its vibrant, bivalve-like fruiting bodies are attractive while developing but lose colour quickly upon maturity or when cooked.
What Do Pink Oyster Mushrooms Taste Like?
Pink oyster mushrooms have a much, richer and deeper flavour than its button mushroom counterparts that we’re well accustomed to finding in the supermarket.
The pink oyster mushroom is chewier and ideal for adding to a stir-fry or soup for that extra umami kick. Try crumbing and frying them for an amazing faux-calamari or even slow roasting in the oven for an hour or two with your favourite seasonings and a lashing of olive oil to make some ridiculously tasty, low-carb mushroom chips.

Opening A Pink Oyster Grow Kit
In order to grow, pink oyster mushroom grow kits will need to be opened exposing the fully colonised substrate to fresh air and humidity.
Vibrant pink clusters of coral-like primordia will form on the surface of the substrate. These clusters will develop into mushrooms. At times these clusters may form under the plastic and can either be released to fruit or left to abort.
Primordia formation can be influenced by making a small opening for fruiting and folding the bag tight against the substrate. This will encourage the mycelium to produce primordia close to the cut where it senses both fresh air and humidity.
Please note that pink oyster mushroom is vigorous and will fruit prematurely within the bag if left unattended.
Pink Oyster Mycelium Appearance
Pink oyster mushroom mycelium is incredibly vigorous. Initially it is finer in appearance and structure than white oyster. Pink oyster mycelium is slightly translucent and will turn more opaque as it matures.
The mature spawn will often begin to turn pink within days of colonisation, this is indicative of it preparing to fruit. The maturing mycelium will produce yellow liquid metabolites which are a completely normal byproduct.
Any primordia which has formed prematurely, or in-vitro can be removed prior to using the spawn as usual.
Using A Humidifier
Humidity can be managed through a diligent misting and fanning regime, however the introduction of a humidifier and humidity controller can help automate the process and ensure consistency.
Adding a 6L humidifier and controller to a greenhouse with the addition of a USB fan is a quick and easy way to make a low cost fruiting chamber that delivers excellent results.
Making A Fruiting Chamber
Mushrooms require humidity to grow. We recommend using a mini-greenhouse. Spraying the inside walls of the greenhouse will help raise humidity. A cheap humidifier can used to automate the process.
It’s important to ensure that the grow kit has fresh air exchange. Mushrooms produce carbon dioxide and will grow long and leggy if they require more oxygen.

Alternatively you can build a Shotgun Fruiting Chamber (SGFC) from a few common items found easily in your local hardware store.
Pink Oyster Pinning Conditions
Expose the fully colonised substrate to fresh air ad humidity to trigger the formation of primordia.
No special are requirements to trigger pinning on pink oyster mushrooms. These will begin pinning on their own if left unattended and should be opened once fully colonised.
Pink Oyster Fruiting Conditions
Fruit pink oyster mushrooms between 20 – 30 degrees Celsius. However they will tolerate temperatures outside this range. Maintain humidity over 85% for best results. Harvest mushrooms before caps turn upwards and release spores.
