Nothing beats some good, honest home cooking. I’m seriously blown away by the sweet and succulent flesh of these spiced lion’s mane fritters. Release the rich juices as you bite through that crispy chickpea batter to find the tender, spice-infused morsel inside.
These lion’s mane pakora are incredibly reminiscent of an extremely tender and juicy fillet of fish or chicken. They’re a delight and I can guarantee that I’ll be making these time and time again for my friends and family.
These mouth-watering morsels can be whipped up in an instant with just a handful of ingredients including a dash of your favourite spices. It’s a complete winner being vegan, gluten free and packed full of flavour.
- 400 grams of lion’s mane mushroom
- 1 cup chickpea flour
- 1 cup water
- 1 tsp garlic powder
- 1/2 tsp cumin
- 1/2 tsp coriander
- 1/4 tsp cayenne
- 1/2 tsp garam masala
Step 2. Prepare Batter
Thoroughly combine all dry ingredients. Spices may be substituted depending on personal taste.
Gradually add water until a wet batter is formed. The batter will thicken upon standing.
Step 3. Dip & Fry
Dip the pieces of lion’s mane one at a time allowing excess batter to drip into the bowl. If sufficiently hot the oil will bubble when the nugget is submerged.
Fry for 6 – 8 minutes until crisp and golden.
Step 4. Serve & Enjoy
Serve with lashings of salt. Optionally, serve with tartare sauce and lemon wedges for faux fish and chips.
